How to Make Pork Meatball Banh Mi

Banh Mi is influenced from French culture and is now popular all over Vietnam. The filling ingredients of this sandwich are however slightly different from that traditional French filling.


Servings: 4
Preparation time: 25 minutes
Ingredients:
  • Ground pork, 1 pound
  • Fish sauce, 1 tablespoon
  • Green onions, 3, choppe
  • Green onions, 3, chopped
    • Cornstarch, 2 teaspoons
    • Fresh basil, ¼ cup
    • Black pepper, 1 teaspoon
    • Garlic, 4 cloves, minced
    • Kosher salt, 1 teaspoon
    • Hot chili sauce, 1 tablespoon
    • Sugar, 1 tablespoon
    • For hot chili mayo:
      • Mayonnaise, 2/3 cup
      • Hot chili sauce, 1 tablespoon
      • Green onions, 2, chopped
      • For sandwich filling:
      • Baguettes, 4, 10 inch long
      • Carrots, 2 cups, grated
      • Sugar, ¼ cup
      • Jalapeno chilies, thinly sliced
      • Rice vinegar, ¼ cup
      • Daikon, 2 cups, grated
      • Asian sesame oil, 1 tablespoon
      • Cilantro sprigs, 16 large
      • Kosher salt, 1 teaspoon
      Method:
    • Preheat the oven to 300 F.
    • Combine chili mayo ingredients together. Add a little salt and refrigerate.
    • Line a baking sheet with plastic wrap.
    • Combine all the pork meat ingredients in a bowl together. Take spoonful of the mixture and roll between your palms. Make medium sized balls and place on the prepared baking sheet.
    • Mix carrots, rice vinegar, and daikon together in a bowl. Season with salt and sugar. Keep side for 1 hour. Toss thrice during this time.
    • Sauté meatballs until brown. Place them back on the baking sheet and bake in the oven until cooked through.
    • Slice baguette in half horizontally and scoop out some bread to make a thick shell.
    • Add chili mayo in the shell topping it with jalapenos and cilantro. Now place ¼ of meatballs and top it with pickled veggies.
    • Serve immediately.

    How to Make Grilled Pork with Vermicelli and Fresh Greens

    This is a popular Hanoi dish served with fish and lime sauce, vermicelli and greens. There are other recipes that are made with these pork patties, for example, tomato broth soup. Although this recipe takes a little long to prepare, it is worth trying.

    Servings: 4
    Preparation time: 2 hours
    Ingredients:
    • Ground pork, 400 g
    • Spring onion, 3, only white part, chopped
    • Purple onion, 1, chopped
    • Green papaya, ¼
    • Honey, 2 tablespoon
    • Fish sauce, 2 tablespoon
    • Salt, 1 teaspoon
    • Pepper, 1 teaspoon
    • Carrot, 1, diced
    • Vermicelli
    • Water spinach
    • Vinegar, to taste
    • Sugar, to taste
    Method:
    • Marinate pork with honey, fish sauce, and 1 teaspoon of salt and ½ teaspoon of pepper. Add chopped onions and combine well. Leave for 6 hours.
    • Mix papaya and carrots and season with salt. Let it stand for 10 minutes. Press with hands to drain excess water. Now add vinegar and sugar.
    • Soak bamboo chopsticks in cold water. Torn them in halve.
    • Now take spoonful of marinated pork and assemble them on the chopsticks.
    • Grill until properly cooked and browned.
    • Serve with pickled veggies, nước chấm, spinach and vermicelli.

    How To Make Vietnamese Steamed Rice Rolls

    These rice rolls are thin in texture therefore you have to take extra care while steaming them. You might mess up a few initially but don’t worry about that, after a little practice you will be an expert.

    Servings: 4
    Preparation time: 30 minutes
    Ingredients:
    For batter:
    • Tapioca flour, 14 oz.
    • Water, 3 quart
    • Rice flour, 16 oz.
    • Salt, 1 teaspoon
    For filling:
    • Ground pork, 1 pound
    • Fresh cracked pepper
    • Shallot, 1, diced
    • Wood ear Mushrooms, 1 cup, chopped
    • Fish sauce, 1 tablespoon
    • Medium onion, 1
    For accompaniments:
    • Fried shallots
    • Nuoc mam cham
    • Vietnamese ham, Cha Lua, sliced
    • Cooking oil
    • Bean sprouts, steamed in microwave
    • Cucumber, julienned
    Method:
    • Sieve flour in a bowl and mix with salt and water.
    • Fry shallots until they turn yellow. Now add onions, pork and fish sauce. Combine well. Cook until pork is done. Add mushrooms and cook for 5 minutes. Season with fish sauce, salt and pepper. Keep aside.
    • Grease a nonstick pan and pour the batter. Coat the pan evenly. Cook for 30 seconds and flip the crepe.
    • Grease an aluminum tray and transfer the crepe on it.
    • Spread the filling on the crepe and roll from the sides.

    How To Make Vietnamese Dipping Fish Sauce

    Also known as nước chấm, this dipping sauce is a must have with every single meal. It’s a combination of fish sauce, sugar and lime juice. The flavors are blended finely with a hint of Thai chilies to execute balanced spice.


    Servings: 4
    Preparation time: 5 minutes
    Ingredients:
    • Fish sauce, 2 tablespoon
    • Water, 6 tablespoon
    • Lime juice, 2 tablespoon
    • Thai chilies, to taste
    • Sugar, 2 tablespoon
    • Garlic, 1 teaspoon, chopped
    Method:
    • Dissolve sugar in water.
    • Add lime juice and mix.
    • Now add garlic and chilies, mix well.
    • Add fish sauce and give a nice stir.
    • Serve.

    How to Make Vietnamese Meatballs

    A typical meatball recipe in Vietnamese style, these tiny meaty bites are seasoned with fish sauce, rice wine and soy sauce with a hint of sugar and garlic for a defined flavor.

    Servings: 20
    Preparation time: 22 minutes
    Ingredients:
    1. Ground beef,
    2. Ground beef, 1 ½ pound
    3. Soy sauce, 1 tablespoon
    4. Rice wine, 1 tablespoon
    5. Sesame oil, 1 tablespoon
    6. Fish sauce, 1 tablespoon
    7. Cornstarch, 2 tablespoons
    8. Sugar, ½ teaspoon
    9. Garlic, 2 clove
    10. Egg white, 1
    Method:
    • Mix all the ingredients together.
    • Take handful mixture and roll between the palms and make medium sized balls.
    • Align them on skewers and grill until well done.

    How to make Vietnamese Cabbage

    This is a unique recipe of stir fried cabbage conveniently served alongside any meal. It can also be eaten as a snack at lunch time. If you like a little spice then sprinkle it with red pepper flakes, hot pepper and tabasco.



    Servings: 6
    Preparation time: 10 minutes


      Ingredients:
      1. Cabbage, ¾ pound, sliced into fine strips of 2 inches
      2. Fish sauce, 1 teaspoon
      3. Garlic, 1 clove, crushed
      4. Egg, 1
      5. Oil, 1 tablespoon
      6. Black pepper, to taste
      Method:
      1. Whisk eggs and fish sauce together and keep aside.
      2. Sauté garlic in oil until fragrant. Remove from the pan.
      3. Place cabbage in the same pan and stir fry for 2 minutes.
      4. Stir water and cover the lid. Cook for 5 minutes.
      5. Uncover and turn the flame high. Make a well in the center of the cooked cabbage and add egg mixture.
      6. Combine well and season with pepper. Stir fry for 2 to 5 minutes and serve

      How To Cook Vietnamese Pho

      Beef pho is a popular Vietnamese noodle soup made with rich broth and fine rice noodles blended with herbs and beef. Pho is also made with chicken so if you are cutting down on beef you can substitute it with chicken.



      • Servings: 4
      • Preparation time: 20 minutes
      • Cook time: 8 hours


      Ingredients:
      1. Beef soup bones, 4 pounds
      2. Bean sprouts, 1 ½ cup
      3. Fish sauce, 2 ½ tablespoons
      4. Green onion, 1 tablespoon, chopped
      5. Dried rice noodles, 1 package
      6. Thai basil, 1 bunch
      7. Onion, 1, unpeeled and halved
      8. Water, 4 quarts
      9. Beef top sirloin, 1 ½ pound, thinly sliced
      10. Lime, 1, cut into 4 wedges
      11. Star anise, 2 pods
      12. Ginger, 5 slices
      13. Cilantro, ½ cup, chopped
      14. Chile garlic sauce, ¼ cup
      15. Salt, 1 tablespoon
      16. Hoisin sauce, ¼ cup
      Method:
      • Preheat the oven to 425 F.
      • Roast beef bones for 1 hour in the prepared oven.
      • Roast onion for 45 minutes or until soft and blackened.
      • Add water in a stockpot. Add onion, star anise, bones, salt and fish sauce. Bring to a boil.
      • Reduce the heat and simmer on low flame for 6 hours. Strain and keep aside.
      • Soak noodles for 1 hour in water. Boil the water and soak the noodles only for 1 minute. Simmer the noodle stock.
      • Prepare serving bowls and add noodles, green onion, sirloin and cilantro in each bowl. Add hot broth and stir. Let it stand for 3 minutes.
      • Serve with lime wedges, sauces, bean sprout and basil.

      Easy Vietnamese Fresh Spring Rolls Recipe



      This is a very different spring roll recipe with a distinctive flavor and texture. These spring rolls make a wonderful appetizer and compliment fish and hoisin sauce.

      Ingredients:



      • ·Rice vermicelli, 2 oz.
      • ·Shrimps, 8 large, cooked, deveined, peeled, halved
      • ·Garlic chili sauce, 3 tablespoons
      • ·Mint leaves, 3 tablespoons, chopped
      • ·Water, ¼ cup
      • ·Rice wrappers, 8,
      • ·White sugar, 2 tablespoon
      • ·Hoisin sauce, 3 tablespoons
      • ·Thai basil, 1 1/3 tablespoons, chopped
      • ·Garlic, 1 clove, minced
      • ·Peanuts, 1 teaspoons, chopped finely
      • ·Cilantro, 3 tablespoons, chopped
      • ·Fresh lime juice, 2 tablespoons
      • ·Lettuce leaves, 2, chopped
      • ·Fish sauce, 4 tablespoons


      Method:

      1. Cook rice vermicelli until al dente, drain and rinse.
      2. Soak each rice wrapper individually in warm water for 2 seconds before using.
      3. Place 2 shrimp halves, basil, lettuce, handful vermicelli, cilantro and mint in the center of each wrapper. Fold the wrappers inwards very tightly so it doesn’t fall open.
      4. Combine fish sauce with lime juice, chili sauce, garlic, water and sugar.
      5. Combine hoisin sauce with peanuts separately.
      6. Serve with both sauces.

      Vietnamese Rice-Noodle Salad Recipe

      This is a very simple salad recipe. Rice noodles tossed with carrots, cabbage, and mint, all seasoned with fish sauce and jalapeno peppers for a fiery flavor. A hint of lime juice and sugar adds a perfect balance of sweet and citrusy flavor.



      Servings: 4
      Preparation time: 15 minutes
      Ingredients:

      • ·Dried rice noodles, 1 package
      • ·Jalapeno pepper, ½ seeded and chopped
      • ·Napa cabbage, 4 leaves
      • ·Carrots, 2, julienned
      • ·Mint, 4 sprigs
      • ·White sugar, 3 tablespoons
      • ·Cilantro, 1 cup, finely chopped
      • ·Vegetarian fish sauce, 3 tablespoons
      • ·Unsalted peanuts, ¼ cup
      • ·Lime juice, ¼ cup
      • ·Garlic, 5 cloves, minced
      • ·Cucumber, 1, chopped


      Method:

      • Combine chopped garlic, jalapeno and cilantro and season with salt, lime juice, sugar and fish sauce. Toss well and set aside for 5 minutes.
      • Prepare noodles in salted water. Drain and rinse.
      • Toss noodles with prepared sauce mixture, cabbage, carrots, mint and cucumber. Garnish peanut and remaining mint atop.
      • Serve.
