Ca Kho To is caramelized fish made in clay pot in an old-fashioned Vietnamese style. If you want you can replace fish with eggs, chicken, pork or other seafood of your choice.

Preparation time: 30 minutes
Ingredients:
- Catfish steaks, 1 ½ pound
- Shallot, 3, minced
- Oil, 2 tablespoon
- White pepper, 1 teaspoon
- Fish sauce, ¼ cup
- Garlic, 4 cloves, minced
- Cilantro sprigs
- Nuoc mau caramel sauce, 1/3 cup
- Scallions, 3, sliced into 2 inch pieces
- Marinate fish steaks in fish sauce, white pepper, shallots and garlic. Let it stand for 30 minutes.
- Take out fish steaks from the marinade and keep the marinade aside.
- Pat dry fish steaks and cook in a clay pot on medium high flame.
- Add the marinade and coat steaks well.
- Add caramel sauce, sugar and scallion. Boil the mixture.
- Now simmer on low flame for 20 minutes.
- Serve with cilantro sprigs on top and steamed rice aside.
