How to make Vietnamese "Ca Kho To"

Ca Kho To is caramelized fish made in clay pot in an old-fashioned Vietnamese style. If you want you can replace fish with eggs, chicken, pork or other seafood of your choice.

Servings: 4
Preparation time: 30 minutes
Ingredients:
  • Catfish steaks, 1 ½ pound
  • Shallot, 3, minced
  • Oil, 2 tablespoon
  • White pepper, 1 teaspoon
  • Fish sauce, ¼ cup
  • Garlic, 4 cloves, minced
  • Cilantro sprigs
  • Nuoc mau caramel sauce, 1/3 cup
  • Scallions, 3, sliced into 2 inch pieces
Method:

  • Marinate fish steaks in fish sauce, white pepper, shallots and garlic. Let it stand for 30 minutes.
  • Take out fish steaks from the marinade and keep the marinade aside.
  • Pat dry fish steaks and cook in a clay pot on medium high flame.
  • Add the marinade and coat steaks well.
  • Add caramel sauce, sugar and scallion. Boil the mixture.
  • Now simmer on low flame for 20 minutes.
  • Serve with cilantro sprigs on top and steamed rice aside.
