Only 40 minutes and this delicious chicken is ready to be served on the table. Cooked in coconut cream, lemongrass, brown sugar and curry paste this chicken recipe is a perfect blend of creamy and spicy flavors.

Ingredients:
- Chicken, 1 pound, cubed
- Mild curry paste, 2 tablespoons
- Medium onions, 2, quartered
- Lemongrass, 4 teaspoons, chopped
- Coconut cream, 1 can
- Ginger, 4 tablespoons, chopped
- Brown sugar, 2 ½ tablespoons
- Chicken stock, ½ cup
- Garlic, 2 cloves, minced
- Small red chili, 1, chopped
Method:
- Stir fry onions until translucent.
- Add ginger and garlic.
- Add curry paste and lemongrass.
- Add chicken and mix well with the mixture.
- Cover the pan and cook for 20 minutes on low flame.
- Now add sugar and mix well.
- Add coconut cream and stock. Mix well and bring the mixture to a boil.
- Simmer for 30 minutes on low flame.
- Serve with steamed rice.
